Cotton Row Cheese Soup


  • 1/4 cup butter
  • 1/2 cup chopped onion
  • 1/2 cup grated carrot
  • 1/2 cup finely chopped celery
  • 1/4 cup all purpose flour
  • 4 cups milk
  • 4 cups chicken broth
  • 1/8 tsp. baking soda
  • 1 pound cheese
  • Paprika


Melt butter in large dutch oven add celery, carrots and onions. Cook until vegetables are tender. Add flour, stir until well combined, then add milk, chicken broth, and baking soda. Add cheese, stir constantly over low heat until cheese has melted. Serve hot, may sprinkle with paprika.
